Sticky Lemon Tofu

Ingredients

For the crispy tofu

  • 1 pack (300 g) extra firm tofu
  • 1 tbsp low-sodium soya sauce or coconut aminos
  • 1⁄2 tsp salt
  • 1⁄2 tsp black pepper
  • 1⁄4 cup (30 g) xanthan gum or cassava flour
  • 1 tbsp sesame oil or spray of grapeseed

For the lemon sauce

  • 1 tbsp sesame oil or grapeseed
  • 4 cloves garlic finely chopped or minced
  • 1 piece ginger 1 inch/3cm long, finely chopped or grated
  • 1⁄4 cup of vegetable bouillon or broth
  • 1⁄4 cup lemon juice
  • 1 tsp lemon zest
  • 1⁄4 cup (50 g) monk fruit
  • 1 tbsp soy sauce
  • 2 tsp xanthan gum mixed with
  • 2 tsp water
  • 1 tsp of sesame seeds
  • 1 sprig of fresh mint

Directions

  1. Drain the tofu and cut it into bite-size cubes.
  2. Place the cubes in a mixing bowl, drizzle the soy sauce over them, and stir gently.
  3. Then add the xanthan gum with salt and pepper, and stir until the tofu is coated.
  4. In a large frying pan, heat up the oil. When it’s hot add the coated tofu cubes and fry until they are golden brown. Turn them over using tongs or a spatula to get them evenly cooked.
  5. When the tofu is cooked, transfer it to a plate so you can use the pan to make the sauce.
  6. Heat up the oil, then add your minced garlic and ginger and fry for 1 minute.
  7. Then add the vegetable bouillon, soy sauce, lemon juice, zest and monk fruit and stir together.
  8. Finally, add in the cornstarch mixed with some water, and simmer the sauce until it’s thick and sticky. Stir frequently.
  9. Combine the tofu with the sauce and serve with rice, noodles or veggies of your choice. Garnish with sesame seeds and/or a sprig of fresh mint.
