Easy Raw Desserts - 3 Best Ideas
By Laura-Jane, The Rawtarian.
Easy raw desserts don’t have to involve soaking, sprouting, dehydrating or thinking much in advance at all. Just make sure to keep the basic easy raw dessert ingredients on hand, like dried coconut, some nuts (pecans, almonds, etc), a sweetener (agave nectar, dates, etc) and raw cocoa powder and you can whip up easy raw desserts in no time!
When I am craving a simple raw food dessert here are a few of my go-to easy raw dessert recipes:
1. Raw brownies – This is a perfect raw dessert to feed to your family as a simple raw dessert that satisfies. Even teenage boys like this one, I am told!
1 cup pecans (you can use walnuts in a pinch, but pecans are much better!)
1 cup dates
5 tablespoons raw cacao (cocoa) powder
4 tablespoons shredded unsweetened coconut
2 tablespoons honey or agave nectar
1/4 teaspoon sea salt
1. Place pecans alone in your food processor and process until the pecans become small and crumbly.
2. Add dates to the raw brownie recipe and process again until the mixture sticks together and the dates are well processed.
3. Add the remaining ingredients to this raw brownie recipe and process again until the mixture turns a lovely dark chocolatey brown. Stop processing before it gets too buttery. (There should still be air between the small bits so that you will be able to press them down into your brownie pan.)
4. Dump the mixture into a brownie dish or small cake pan and press down firmly using your clean hands.
5. Refrigerate this raw brownie recipe for a couple of hours. You do nothave to refrigerate it, but it is much easier to slice when chilled. By the way, this is actually a raw brownie recipe that keeps its shape! So it can be good for serving to non-raw fooders because the presentation of this raw brownie recipe is good when chilled.
6. Store this raw brownie recipe in the refrigerator if it lasts that long!
2. Raw chocolate fudge in 1-minute – This easy raw dessert is awesome because you can make it in just a few minutes, and no special equipment is required. This is a small chocolate fix perfect for one person.
3 tablespoons cocoa powder
2 teaspoons coconut oil
2 teaspoons honey
1. Throw the ingredients in a tiny bowl.
2. Grab a spoon and take the bowl back to your TV.
3. Mix it together while you’re watching TV because it can take a little while to mix properly, especially if your coconut oil is hard. It’ll look really dry at first, but don’t add any extra anything. Just go with my measurements and mix it together slowly and carefully with a spoon. Within a minute you’ll get the texture seen in my above pic.
4. Enjoy! This raw chocolate fudge is really sweet so you don’t need much of it to get a nice hit of sweet chocolate flavour.
3. Raw chocolate macaroons -Try this recipe as one that you keep on hand in the freezer for when you’re looking for an easy raw dessert that keeps well in the freezer so that you always have something sweet on hand.
2 1/2 cups dried shredded coconut
3/4 cup coconut oil (liquid)
1/2 cup maple syrup
1/2 cup raw cocoa powder
1 teaspoon pure vanilla extract
1/4 teaspoon celtic sea salt
1. Add all ingredients into large bowl except the shredded coconut.
2. Stir with spoon until well mixed.
3. Once combined, add shredded coconut. Stir again until well combined.
4. Form into small mounds and place on plate. Freeze for half an hour. (Haystacks will harden when cooled.)
5. Store leftover haystacks in freezer or refrigerator.
