fancy schmancy easy peasy maple glazed salmon
This is it. The big one. If I need a fancy kind of a meal, this is what I make. This is what I make when I feel like we need a nice dinner but can’t go out to a restaurant because we don’t have a babysitter. This is “have the boss over to dinner” fare. (Does anyone do that anymore?)
And it couldn’t be easier! Of course it helps if your family likes salmon. But even the pickiest of kids will at least try this. Smothered in a maple glaze, what’s not to like?
Fancy Schmancy Salmon
2 lbs salmon, with skin on
2 Tbsp soy sauce
1/3 cup thinly sliced green onions
1/3 cup maple syrup (honey works as a substitution)
1 tsp of sesame oil (2 tsp of toasted sesame seeds work well if you don’t have the oil)
2 cloves garlic, minced (I’ve also used roasted garlic if that’s all I have on hand, with very good results)
Preheat oven to 375.
In a small bowl combine all ingredients except the salmon. Stir until well blended.
Place salmon, skin side down, in a baking dish. (by keeping the skin on the salmon, you can easily lift the salmon off once it has been cooked)Spoon mixture over salmon.
Bake salmon in oven for 30 minutes or until fish flakes easily with a fork, basting occasionally with sauce. Don’t overlook your salmon. Slightly undercooked is ok.
I serve this with roasted garlic mashed potatoes and either asparagus or salad.
